My Favorite Homemade Bibimbap

 I want to share a beautiful, balanced meal that I have been eating over and over again in the past few weeks. It makes my mouth water every time I THINK about eating it. 

 

It's an at-home-version of one of my favorite go-to meals when I'm out - Bibimbap! Bibimbap is a Korean version of fried rice. The flavors, freshness, and complexity is incredible. See how I made it this time - I think it's my best yet and a recipe I will come back to time and time again!

1. I made the New York Time's recipe for Korean Barbecue-Style Meatballs by Kay Chun. After scouring the notes, it sounded like I needed to add a little extra to this basic recipe, so I doubled the recipe and added: a couple tablespoons of ginger (I LOVE the frozen stuff from Trader Joes, but it's an easy thing to freeze yourself, too!), a good ¼ cup of oyster sauce (this sweetened the mixture and made it more bbq-like), a few dashes of fish sauce, and some hoisin sauce. They are DELICIOUS (and the kids LOVE them!). I doubled the recipe so I could put some in the freezer for a busy day.

2. As the meatballs were in the oven, I cooked up some brown rice (more fiber than white, but traditionally white rice is used) and used my mandoline (I have this one and I love it - just be careful!) to quickly slice up some perfect, thinly cut veggies. I love raw carrots, cucumbers, and radish in my bibimbap, but you could use whatever you have on hand - you can't go wrong, really! 

3. Once the veggies were sliced, I sautéed some baby bok choy with a little garlic for some extra cooked veg and fried up a lightly cooked egg (you want the yolk to be a bit runny!). 

4. I put it all together – rice, meatballs, bok choy, veggies, egg on top - and topped it with some kim chi (delicious and great probiotics and prebiotics to keep those gut bugs happy!) and this gochujang sauce (it's the best and I also love it on hard boiled eggs!).

 Guys. I'm not kidding, I could eat this forever and not get sick of it. It's like the perfect balance of savory protein, raw veggies, cooked veggies, spice and filling rice! I feel so energized by this dish. I can't wait for you to try it and love it, too!
