Everything Tofu!
Last week, I shared my dinner plans for the week, as I typically do over on my instagram. We had not one but TWO meals that used tofu as the protein, and I got lots of questions about HOW I prepare it and what are my favorite tofu recipes. So, I thought I'd share more here for those of you that want to learn more about this enigmatic food.
First of all - why do we eat it? Tofu is a soy-based product that is packed with nutrition. It's high in calcium and fiber and has lots of beneficial phytonutrients and isoflavones, which are protective anti-inflammatory and anti-oxidant chemicals. When we're trying to eat less meat (which can also be beneficial to our health!), it's a great meat-alternative because it's a complete protein.
Here's how I like to prepare my tofu:
I almost always purchase firm or extra firm (most recipes call for this) – I especially like the sprouted tofu from trader joes that comes in ½ blocks (because, most of the time, I'm preparing it just for myself!).
When I'm preparing tofu for a recipe, I always slit open the package and let the water drain off.
Next, you want to press the tofu to get out any excess water (this helps it stay firm when cooked). I'll cut up the tofu as I like (usually in cubes or triangles), and put it between two plates that are lined with a few paper towels or dish towels. You can also purchase a tofu press, but with a small kitchen, I haven't found this necessary, yet… though it's always in my amazon shopping cart… I'll let you know how I like it if I eventually purchase…
Let the paper towels soak up the excess moisture for at least 15 minutes (but sometimes I'll do this a few hours ahead of time and put it back in the fridge!).
Prepare as directed in the recipe.

These are great recipes to start with – but hey, I'll be honest - it took me a while to feel confident with cooking tofu, and I still end up with a soggy, weird mess sometimes. It's great to try out new things and experiment with new foods, but I know that can be anxiety provoking for some! Have a frozen pizza and a salad kit at the ready just in case it's a complete failure and let yourself laugh it off!
